POSITION PURPOSE:
Directs and organizes the activities of the Cost controlling Department to maintain high standards consistent with CCR standards.
The Cost controller is responsible for the preparation of timely and accurate daily, weekly and monthly statements and reports according to the policies and regulations; and at all times must conduct himself in accordance with the CCR Code of Ethics and policy.

EXAMPLES OF DUTIES:
ESSENTIAL FUNCTIONS:
Minimum 10 hours of work a day
• Produce Monthly F&B Cost Control report detailing achieved cost against budget.
• Prepare inventory results and explaining any discrepancies.
• Provide reconciliation of food, beverage, and Diesel and Gift Shop costs.
• Conduct monthly physical inventories and produce monthly outlet inventory results detailing credits/debits for adjustments such as management’s discounts, food transfers, spoilage….
• Produce monthly detailed menu analysis based on recipe castings
• Produce Daily Food Cost Report.
• Ensure the daily inventory of the staff shop
• Make spot checks in all the outlets (F&B, gift shop, staff shop….)
• Monitor par stock level; ensure POS/PMS is updated and accurate.
• Liaise with Purchasing on any supply or pricing issues.

• Considerable skill in complex mathematical calculations without error. Ability to apply
Concepts such as fractions, percentages, ratios and proportions to practical situations.
• Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact and diplomacy to defuse anger, collect accurate information and resolve conflicts.
• Ability to move throughout all Accounting areas and perform essential job functions.
• Ability to read, analyze and interpret written documents; listen and communicate effectively in English, both verbally and in writing.
• Ability to access and accurately input information using a moderately complex computer system.
• Hearing, smelling, tasting and visual ability to successfully perform the essential functions of this job including emergency situations.
OTHER FUNCTIONS:
• Regular attendance in conformance with the standards, which may be established by CCR from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment
• Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the resort.
• Upon employment, all employees are required to fully comply with CCR rules and regulations for the safe and efficient operation of resort facilities. Employees who violate CCR rules and regulations will be subject to disciplinary action, up to and including termination of employment.
QUALIFICATION STANDARDS
Education:
Minimum of Bachelor’s Degree in Accounting with major in Hotel Accounting.
Experience:
Five years in F&B cost controlling operations hand’s on, practical knowledge of computerized Property Management Systems, including Point of Sales systems, where applicable.
Licenses or certificates:
Health and Safety preferred.
