Ludovic Garnier, the esteemed Executive Producer Culinary at Paramount Hotel Dubai, was proudly recognized with the Judges' Choice Award for Culinary Leader of the Year at the prestigious Middle East Chef Excellence Awards 2025. This grand event, celebrating the pinnacle of culinary excellence in the region, took place on June 2nd at the opulent Address Sky View, Dubai. This significant accolade underscores Chef Garnier's exceptional leadership, strategic vision, and profound impact on the culinary landscape of the Middle East.
At Paramount Hotel Dubai, Chef Garnier leverages over two years of dedicated leadership as Culinary Director, meticulously overseeing and refining the hotel's comprehensive culinary operations and Food & Beverage offerings across its multiple luxury outlets. Under his astute guidance, the culinary team is empowered to achieve new heights, with a sharp focus on detailed menu cost analysis, enhancing operational efficiency, and consistently delivering truly exceptional guest experiences. His leadership ensures that every culinary endeavor aligns seamlessly with the hotel's persistent commitment to the highest standards of quality and service.
Chef Garnier's illustrious career is built upon a foundation of extensive experience garnered from previous leadership roles at renowned establishments such as Waldorf Astoria Ras Al Khaimah and the InterContinental Hotels Group. These roles have finely honed his results-driven approach, enabling him to expertly optimize workflows and inspire cross-functional teams to achieve collective success. During his tenure as Cluster Director Culinary for IHG Group in Abu Dhabi from December 2017 to June 2021, he was responsible for the kitchen operations of four hotels, encompassing 27 outlets and multiple catering and banqueting operations. He notably improved cost and sales, upgraded restaurants, and played a key role in refreshing outlets, demonstrating strong financial acumen by preparing and monitoring budgets, analyzing financial reports, and managing dry store controls.
Prior to this, as Executive Chef at Waldorf Astoria Ras Al Khaimah from June 2021 to November 2022, he managed a team of over 40 chefs, maintaining high food standards and successfully reopening three restaurants. His experience also includes a significant period as Executive Sous Chef, where he managed large teams of 140+ chefs, contributing significantly to hotel food revenue through banqueting and catering operations, and ensuring strict compliance with HACCP and Dubai Municipality standards.
