POSITION SUMMARY
Manages and oversees the successful operation of all dining venues to include a primary focus on the Signature Dining Experience. Inspires and motivates the restaurant management and Ladies and Gentlemen to deliver technically proficient, efficient and personalized luxury food and beverage service while creating a world class work environment and guest experience. This position is the primary driver of all service and Public Health standards in restaurant venues. Identifies and acts on opportunities for training and product and service enhancement.

ESSENTIAL DUTIES
Oversees the service of dining venues, including the Signature Dining Experience. Supports the Restaurant Manager in the supervision of Restaurant and Bar venues, supervising Ladies and Gentlemen and understanding the positions of all reports well enough to perform their duties in the employees' absenceConducts Line-Up and daily training, development and supervision of Food and Beverage team in product knowledge and serviceAnticipates the needs of guests and Ladies and Gentlemen by ensuring all supplies are readily available before and during service, maintaining a clean, safe and accident-free environment, and immediately responding to the needs of all guests and fellow Ladies and GentlemenSupervises and assisting with the setup, cleaning, and breakdown of restaurants and bars and maintains equipment, supplies, goods in all work areas, reporting any issues to leadershipEnsures proper inventory processes including requisitions, receiving, moving and stocking product in accordance with first in, first out (FIFO)Ensures compliance with Public Health and all Safety and Labor Regulations as well as prepares for and assists with all Sanitation and Public Health inspections Execution of service for all special eventsHands-on execution of the day-to-day operations of the Restaurant and Bar venues Managing financial performance to exceed expectations for Food and Beverage venues in partnership with lateral and supporting roles as well as Senior leadership PEOPLE MANAGEMENT Model and hold others accountable for promoting the Gold Standards, respect and fair treatmentEnsures the Daily execution of Line-up in accordance with company standards and Brand GuidelinesSets the department's expectations for desired behavior, knowledge and skill levelsCoaches others by providing constructive feedback; helps others identify developmental needs and monitors progress; promoting an environment where everyone is valued and includedDemonstrates alignment with corporate strategies and initiatives while ensuring alignment throughout the yacht organizationUtilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty and integrity; leads by exampleCoordinates and maintains on-going training program and its' execution to ensure all F&B Ladies and gentlemen always have access to all pertinent training materials and are regularly tested on all information including menus, hours of operation, steps of service, Gold Standards and other divisional, yacht and brand informationMaintains and delivers a comprehensive and engaging on-boarding program which successfully welcomes and integrates new ladies and gentlemen into the operation and provides the foundation for their career with the brand to grow QUALIFICATIONS Valid Standards of Training, Certification and Watchkeeping for Seafarers (STCW) and flag certification for the duration of the contract and appropriate to positionWSET Level 2, Court of Master Sommeliers Introductory or equivalent certification in beverage knowledgePrevious MaÎtre d' or Dining Room Manager experience in a five-star restaurant or onboard a luxury cruise restaurant environmentSuperior knowledge and experience in Public Health rules and regulations related to USPH and HACCPExcellent working knowledge of food, beverage (wine, beers, spirits, cocktails, coffee, tea) and international cuisine PHYSICAL & LANGUAGE REQUIREMENTS - While performing the duties of this job, the employee is regularly required to stand; walk; use hands to touch, handle, or feel; reach with hands and arms; talk or hear; and taste or smell. The Lady or Gentleman must occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
- All Yacht Ladies and Gentlemen must be physically able to participate in emergency lifesaving procedures and drills. Full use and range of arms and legs as well as full visual, verbal and hearing abilities are required to receive and give instructions in the event of an emergency including the lowering of lifeboats. Ability to lift and/or move up to 50 pounds.
- All Yacht Ladies and Gentlemen must be able to communicate in the English language in order to understand and interpret written procedures. This includes the ability to give and receive instructions in written and verbal forms and to effectively present information and respond to questions from guests, supervisors and co-workers.
