Job Description

1. Oversee the planning of menus and utilization of food surpluses and leftovers, taking into account probable number of guests, market conditions, and popularity of various dishes and frequency of menu.
2. Review menus, analyzes recipes, determines food, labour overhead costs and assigns prices to menu items.
3. Directs food apportionment policy to control costs.
4. Maintain profitable food production level according to forecast.
5. Consistent in quality, and which reflects the style of the outlet concept.
6. Supervises outlet chefs and commissary kitchen personnel and coordinates their assignments to ensure economical and timely food production.
7. Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared is prescribed manner.
8. Frequently taste food and beverage in all outlets and be demanding and critical when it comes to quality.
9. Estimate food consumption and purchases or requisitions foodstuffs and kitchen supplies.
10. Devises special dishes and develops innovative recipes.
11. Encourage Food and Beverage Manager to be creative and support his marketing and up sells activities. Encourage creativity among the outlet teams.
12. Ensure HACCP standards in all kitchen areas
13. To assist in monitoring and analyzing the activities and trends of competitive restaurants, bars and other hotel banqueting departments.

1. Strong background in MICE hotel
2. Strive for results (success oriented, data finder, initiate / pro-active)
3. Excellent Communication skill
4. Good managerial, interpersonal, motivational, and leadership skills
5. Fluent in English both written and verbally
6. Must have experience in the same position at least 5 years
7. Bachelor degree or hotel school graduates
8. Available for Indonesian Nationality only
