An exceptional opportunity presents itself for an Executive Pastry Chef to be part of an iconic London Opening. The landmark Old War Office located in historic Whitehall, is being transformed into an iconic Raffles ultra-luxury hotel and deluxe residences.
Reporting into the Director of Food & Beverage, you will be responsible for directly overseeing the pastry offering in our F&B outlets including In Room Dining and Events.
In addition, you will be responsible for creating an afternoon tea in our Drawing Room.
The Executive Pastry Chef will need to ensure the highest Kitchen standards are maintained at all times, and full compliance with relevant safety audits.
They will coach and develop your senior team of Sous Chefs ensuring there is expertise in all areas of pastry within the team.
They will engage with local suppliers to ensure they deliver the best products and service
They will have to communicate effectively ensuring that the teams are aware of the menu and are able to source the correct ingredients
They will need to demonstrate high levels of planning, organising, and time management to drive the operational execution across the Pastry Kitchen liaising with the other Head Chefs and any external partners.
