Job Description

• Will be in charge of a Team of professionals handling all meat and seafood processing, charcuterie, fish-mongerie... for a large-scale international brand name hotel with banqueting and fast-paced outlet operations.
• Prepares yield tests of all items used in butcher shop.
• Assists within the operations, daily market lists & inter-kitchen transfers as required

• Has a high knowledge and experience in real global standard (European, Asian, Filipino) charcuterie, meat, and seafood processing.
• Strong leadership skills, passionate, motivated and a team player
• Strong culinary background from top level international free-standing or hotel à la carte restaurants.
• Strong in the A-Z of Commissary, Butchery, and Stock Management Operations.
