An exceptional opportunity presents itself for a Head Chef - Main Kitchen to be part of an iconic London Opening. The landmark Old War Office located in historic Whitehall, is being transformed into an iconic Raffles ultra-luxury hotel and deluxe residences.
Reporting into the Director of Food & Beverage, you will be oversee and direct the Main Kitchen which includes IRD. You will be responsible for supervising the team and ensuring guest, resident and customer needs meet the highest standards, in line with company expectations.
The Head Chef will be actively involved in menu development, maintaining updated and accurate costings of all dishes prepared and sold in the F&B operation
They should ensure full compliance with food handling and sanitation standards, maintaining 5* food hygiene rating. To be alert for opportunities to improve the profitability of the department i.e., through controlling wastage and being responsible for the economy of all utilities and resources.
In addition, they should keep abreast of newest trends and innovations in the hospitality industry, be innovative to develop new techniques and menu items to increase sales, reduce costs and improve productivity.
To accurately forecast revenue and payroll on a weekly basis and take appropriate action to influence results positively towards exceeding budgets whilst ensuring that appropriate department holiday plans are maintained.
To assist in the formation of the annual department budget, and to monitor it throughout the year, reporting reasons for all variances of actual versus budget and recommending and implementing appropriate actions.
Finally, the Head Chef should display exceptional leadership by providing a positive working environment, demonstrating a dedicated and professional approach to management, with a focus on staff retention and development.
