Job Description

The Marco Pierre White Steakhouse Bar and Grill is located within the Mercure Bridgwater Hotel which is at the heart of Bridgwater town center and offers 119, 4 star bedrooms.

This Sous Chefs position is for someone who has a previous experience in a fast paced kitchen ideally a branded fresh food concept.

The position involves-

- Managing a team of up to 10 staff

- To work within defined Mercure and Marco Pierre White minimum standards which will apply to all food & beverage operations, and to ensure that these standards are continuously maintained.

- Implementation of all brand specific standards and menus.

- Running the kitchen when the head chef is not on duty

- Ensuring your brigade has high culinary standards

- Managing food purchasing and storage

- Maintaining a safe and hygienic kitchen environment

- Ensure training of all staff to the required standard, identifying training needs and co-ordinating training activity.

- Monitor the performance of all kitchen staff.

- Providing guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating

- Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance

- Work with head chef to maintain kitchen organisation, staff ability, and training opportunities

Work Experience

The successful candidate will have previous experience of working in a high volume kitchen operation, with a proven track record of delivering results.

- You will need a passion for hospitality, exceptional customer service, great quality fresh food, customers and people

- Have at least a level 2 food hygiene qualification. Level 3 -will be trained in House
