Job Summary/ Purpose:
The Food & Beverage Manager / Director of Food & Beverage is responsible for the overall administration and operations of the Food and Beverage Division including the maximization of profits, enhancement of customer’s satisfaction through establishment of quality standards and maintenance of high staff morale.
 
Duties

•Ensures that each outlet is managed by a manager/management team who is totally accountable for the outlet’s profitability.
•Develops the annual operating budget for each outlet together with the Outlet Head concerned, which will form part of the Business Plan.
•Ensure that all outlet heads have thoroughly analyzed the monthly P&L performance per outlet.
•Prepares CAPEX list to further upgrade F&B facilities for approving body review.
•Keeps updated on market trends.
•Ensures that all outlet heads are fully aware of market needs and trends and that their products meet these requirements.
•Develops specific promotions and menus to enhance the quality and profitability of the F&B Division and also establishes a festive season calendar.
•Regularly reviews guest feedback on quality of food and beverage (through guest comments, performance monitor, etc.)
•Walks through all F&B areas daily and Notes and immediately rectifies operational flaws.
•Develops strategies to maximize information dissemination on service and facilities of F&B outlets.
•Provides Communications with information needed for advertisements, mailing, and press releases.
•Analyses daily reports and log books to share information with other divisions and the F&B team in order to create business awareness.
•Identifies training needs of staff and coordinates conduct of appropriate training or conducts the training himself to respond to that need in a timely manner.
•To have complete knowledge of Shangri-La’s standard operating policies and procedures for F&B including POS operational systems in regards to tracking of Golden Circle points earning and redemption at each outlet.
•To be fully conversant with Golden Circle programme rules, enrollment, earning and redemption proposition, membership tiers qualification, renewal and exclusive benefits of each higher membership status.
•Formulate regular updates/training of Golden Circle for existing and new F&B colleagues in regards to programme rules, promotion campaigns, enrollment, earning and redemption proposition, membership tier qualification, renewal and their respective benefits.  
Requirements

•Degree in Hotel Management
•Minimum 2 years as Asst. Director of F&B in a large international class hotel.
•06yrs of F&B management experience.
•Commitment to professional values and Guest orientation.
•Outgoing, People oriented & Motivator with effective human relations skills.
•Self-starter
