Summary of Responsibilities:
Reporting to the Executive Pastry Chef, responsibilities and essential job functions include but are not limited to the following:

• To consistently offer professional, friendly and proactive guest service while supporting fellow colleagues
• To be responsible for monitoring bread, pastries and savory items quality and consistency
• To supervise and monitor production of bread, pastries and savory items for respective outlets in terms of quantity in order to avoid wastage
• To be responsible for daily check of dry store, to ensure that all perishable items delivered to the hotel follow the written guidelines for product specification
• To conduct weekly bakery walk through to ensure that the kitchen sanitation and engineering maintenance and standards are met
• To supervise the work of bakers and rank and files colleagues with fairness and approachable attitude
• To be able to demonstrate management abilities when required to deal with budget matter such as labor costs, training, food cost etc.
• To perform hands on, and when required, being able to demonstrate versatility in different cultural aspect related to bakery
• To ensure the highest standard of hygiene and sanitation in all bread related outlets along with monitoring all job description guidelines
• To consistently monitors through daily spot check of all food items being ordered within outlets to ensure proper usage of products and minimum wastage
• To coordinate all function with the Executive Chef and Executive Pastry Chef to ensure maximum efficiency and use of facilities, ingredients and staff productivity
• To ensure all equipments are stored in its designated place and in the most hygienic manners
• To ensure all perishable items are properly stored avoiding unnecessary quantities within the kitchen area
• To ensure smooth and effective communication among kitchens and other department
• To work closely with receiving and storeroom associates in order to make sure that goods arrive in perfect condition according to the hotel specification and standard
• To update costing of recipes from time to time
• To participate with the Executive Pastry Chef on R&D rotations of items in different outlets
• To be responsible for the hygiene and cleanliness of all kitchens including staff kitchen restaurant
• To liaise and work closely with the Chief Steward for pre-planning and execution of delivery and cleanliness of equipment
• To check that working areas, working tables, working utensils such as carving boards, slicer, mixers, blenders, cutters, woks, pots, pans etc. are cleaned and sanitised as per HACCP policies
• To liaise with all departments to ensure a correct and professional operation is conducted. To ensure all colleagues are on time at all times and that proper disciplinary action is taken when the policies of the culinary division are not followed
• To evaluate the performance of the kitchen staff and gives Executive Pastry Chef any recommendations for promotions or other actions
• To conduct training regularly for colleagues to develop their skills/new menu items

Qualifications:

• Previous leadership experience in a Bakery preferred
• 1 - 5 years of experience in a Luxury Hotel preferred
• Diploma Certification in a Culinary discipline an asset
• Strong interpersonal and problem solving abilities
• Excellent in leadership & supervisory skills with a "hands-on" approach
• Highly responsible & reliable
• Ability to work well under pressure in a fast paced environment
• Ability to work cohesively with fellow colleagues as part of a team
• Ability to focus attention on guest needs, remaining calm and courteous at all times
• Oral and written fluency in English

Physical Aspects of Position:
Physical aspects of the position include but are not limited to the following:

• Constant standing and walking throughout shift
• Frequent lifting and carrying up to 30 lbs
• Occasional kneeling, pushing, pulling
• Occasional ascending or descending ladders, stairs and ram
Visa Requirements: Must be eligible to work in Poland
