JOB DESCRIPTION

Under the general guidance and supervision of the Restaurant Manager or Food & Beverage Director and within limits of established Majestic Hotel Tower policies and procedures, ensures that all related matters are coordinated to restaurants, staff, and concerned departments.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES

-Maintains the staff schedule in order to keep the department properly manned at all times.
-To follow up and conduct on the job training regularly with documented records sent to the Training Manager on a monthly basis.
-To hold daily pre service briefings with the team to review the daily operation, and discuss past performances that can be improved under the guidelines standards set for the restaurant.
-Inspect the Restaurant prior to each service and ensure that the guest specification and service standards are met at all times, i.e. cleanliness, preparation of mise-en-place, bulletin board and appearance of personnel.
-To attend all food and beverage briefings and meetings
Recognize VIP’s and long staying guests and regular guests.
Supervise the overall service operation
-To ensure that all guests are as satisfied and to constantly increase the standards.
-To ensure telephones are answered in three rings as per the standards set for the outlet.

-To supervise the beverage stock inventories daily, linen, condiments and operating equipment of the outlet and to ensure that the above is kept in the best possible condition.
-To ensure that the restaurant’s potentials are always in line with the day to day sales by regularly monitoring stocks.
-To fully cooperate with the Food & Beverage Controller on a daily basis with regards to inventories and control policies of the hotel.
-To maintain logbook where any pertinent information like revenue, accidents, incidents or complaints is listed. This logbook should be sent to the Food & Beverage Director.
-Responsible for all transactions and accounting procedures.
-To ensure that all operating equipment taken from the stewarding department is returned without any discrepancy.
-Hygiene standards to be maintained always.
-Awareness on fire and general safety standards.
-To control safety and contribute to cost saving measures tabled by the food and beverage department.
-To participate in Food & Beverage sales blitz and sales calls implemented on a daily basis with written sales call reports to the Food & Beverage Director.
-To Train and develop subordinates so that they are motivated and ready to take up a promotion when available.
-To ensure that all information received from the Food and Beverage Office is strictly adhered to and communicated to the rest of the team.
-To operate in compliance with the local state law and regulations.
-To maintain high levels on interaction skills with the staff.
-To respect and operate in line with policies and procedures set by other departments, Housekeeping, Engineering, Front Office, Laundry, Stewarding, Purchasing, Accounts, Security, Personnel and Kitchen.
-To ensure that outlet menu specification with regards to service and presentation is strictly followed.
-To ensure that lost and found procedures are followed as per the policy set by the Housekeeping Department.

Outlet staff communication meetings should be held monthly minutes copied to the Food and Beverage Management Team.
-To ensure that all guests orders are checked and delivered in time.
-To attend all Hotel’s Training as requested by the management.
-To ensure that house rules are followed.
-To be aware of all emergency procedures.
-To promote team work within the Department & ensure equality at work place is maintained without sexual discrimination and harassment.
-To strictly adhere too the Hotel’s Policy on Confidentiality and Ethics.
-To perform all other tasks as requested by the management.
