 Prepare and analyze food and beverage costs and recommend alternatives to improve costs.
 Assist in the monthly food and beverage inventories count and extension.
 Assist management in menu costing in order to establish menu item sale prices.
 Prepare F&B reports as requested by Management.
 Cost all food and beverage items and where practical, input these costs into the point of sales system and generate monthly potential food and beverage
cost of sales.
 Liaising with the finance department with regards to establishing the monthly evaluation of work done, goods received and services rendered for invoice
preparation and verification.
 Ensure that all cost related work is in compliance with procurement contract(s).
 Works with the Executive Chef to coordinate tracking of high-cost items in the food area
 Prepares preliminary food and beverage cost report to summarize purchases
 Reviews daily food production as it relates to cover forecasts to see that it is according to plan
 Coordinate with restaurant management and finance to sort out issues pertaining to ‎F&B.‎
 Prepare variance analysis for food & beverage and communicating/discussing with ‎relevant parties. ‎
 Conduct spot check to ensure that the goods received are as per specifications and ‎the deliveries of goods by suppliers are consistent with the receiving
schedule and ‎the storerooms are not overstock especially during month – end. ‎
 Establish and maintain a database for food and beverage inventory stock including up-to-date pricing.
 Highlighting cost areas of concern and suggesting areas of improvement.
 Maintaining comprehensive accessible registers of financial approvals, variations, and change orders.
 Price all food and beverage storeroom requisitions and compute the following:
Monthly food and beverage actual costs by outlet
Monthly storeroom variances for food and beverage
 Reviews purchasing procedures for all F&B items
 Ensures compliance with documentation/authorization processes
 Able to work in a fast-paced environment and cope with pressure


Qualifications:
• Cost Accounting designation or enrollment in a recognized Accounting Program.
• Previous restaurant accounting experience (Minimum 2 years preferred).
• Excellent written and verbal skills.
• Ability to motivate employees and proven leadership skills.
• Familiarity with Financials System, Reporting System, Micros POS and Excel
• Must be willing to work a flexible schedule in order to accomplish all major responsibilities and tasks.
• Must be willing to accept assignments on as need basis, in order to promote teamwork.
• Must have a commitment to follow all local and corporate policies and procedures as they relate to the position.
• Must be self-motivated and possess a high degree of analytical ability and confidentiality, and work in a safe, prudent and organized matter.
• Excellent written, oral and presentation skills
• Analytical approach with good eye for detail
• Ability to build rapport with other colleagues, managers, and suppliers and maintain strong relationships
