Job Overview

He/she assists (hands on) the Executive Sous Chef in the day-to-day operation, taking overall responsibilities (if the situation calls for) during his/her absence, thriving for the highest possible guest satisfaction. Works in close cooperation with all other key departments in the hotel.

1. Monitors all duty schedules in the butchery kitchen operation.
2. Works hands on towards the timely kitchen preparations for all meal service periods in the outlets and banquet activities.
3. Regularly tours his/her Kitchens, stores and other food production facilities ensuring the highest degree in applied hygiene and food safety.
4. Handles guest's complaints directly if the situation calls for.
5. Drives together with the Executive Sous Chef all extracurricular events in the outlets as per the annual promotions calendar.
6. Controls the food cost by preparing/reviewing/all store requisitions and direct purchase submits them for signature and ensures the accurate delivery of goods.
7. Ensures that his/her immediate reliever is well informed about all relevant operational issues.
8. Directs the development of future Senior Chef's.
9. Conducts daily checks on the appearance (condition of uniforms) and grooming of assigned.
10. Conducts regular spot checks on expiry dates of food products.
11. Prepares hands on all menu changes and contributes to standardizing the presentation of all dishes.
12. Handles all food transfers out of the kitchen to other areas and ensures proper documentation.
13. Ensures the proper handling of all OS&E and operating equipment.
14. Participates in establishing the month end inventory in all areas.
15. Attends meetings (on behalf) and conducts daily briefings with all key personnel if the situation calls for, to ensure open communication lines.
16. Participates to meet the department's revenue budget and exercises the constant control of operational costs (food, labor and maintenance).
17. Is familiar with the company's internal policies and all safety procedures.
18. Conducts competition checks (on instructions) to assist the company in being updated on local industrial activities.

SELF MANAGEMENT

1. Comply with Hotel Rules and Regulations and provisions contained in the Employment Handbook
2. Comply with Company Grooming Standards at all times to portray a professional image of self and the hotel.
3. Comply with Time and Attendance Policies set by the hotel.
4. Actively participate in training and development programs and maximize opportunities for self-development
5. Demonstrate understanding and awareness of all policies and procedures relating to Health, Hygiene and Fire Life Safety
6. Familiarize yourself with emergency and evacuation procedures
7. Ensure all security incidents, accidents and near misses are always logged in a timely manner and brought to the attention of the Line Manager
8. Comply with the Company's Corporate Code of Conduct
9. Familiarize self with the company values (Great Hotels Guests Love) and model desired behaviors (Winning Ways, Room to be Yourself) and ways of working (IHG Wheel).
10. Perform all tasks as directed by the Manager in pursuit of the achievement of business goals
