Job Synopsis:

Reporting directly to the Sous Chef or his delegate, providing functional assistance and direction to personal deployed in the kitchen Oriental Section. Interacts, cooperates with other Departments and other sections of Food & Beverage as appropriate.

General Tasks and Responsibilities:

1. Specific Duties and Responsibilities:

• Assisting, and supervises the seasoning, marinating, braising, roasting, grilling, broiling and frying of all Oriental meats, poultry and seafood’s for all entries,
• appetizers in accordance with established Recipe Cards and methods.
• Assisting, and supervises the preparation of all Oriental Dishes in accordance with established Recipe Cards.
• Ensures entrees are correctly garnished before being sent to the Restaurants for service in absence of Oriental Chef.
• Assist Oriental Chef, to Check daily function sheets and daily menu to ensure appropriate production levels.
• Tastes sauces (Arabic / Oriental) to ensure correct taste.
• Ensures portion control policy / standard plating instructions are adhered to.
• Ensures that all Oriental Dishes are served in correct manner and waste avoided.
• Conducts On-The-Job Training as appropriate in absence of Oriental Chef.
• Co-ordinate with Oriental Chef to keep oriental Kitchen clean and in orderly fashion.
• Ensures that all equipment / utensils in the section are correctly handled and maintained.
• In absence of Oriental Chef, Ensures always have sufficient supplies of food to carry out prompt service to all Outlets including Employee, Royal Guard and Driver Cafeteria.
• Assist Oriental Chef for the Menu Planning as appropriate.
• Establishes and maintains effective employee relations.
• Ensures IHC Hygiene and Sanitation Standards are attained in his section.
• Coaches employees in his section the “Clear as you Go” method of working.
• Complies with Palace Health and Safety Policy.
• Assist the Oriental Chef in the preparation of menus and participates in the presentation policy in consultation with the F& B Office by taking into consideration the following:
 Local requirements.
 Market Needs
 New trends
 Recipes
 Food Costs
 Availabilities of the F & B products.
• Assist Oriental Chef to keep an up-to-date standard recipe file for all food items to include:
 Recipe list
 Sales history
 Importation items cost
 Par stocks
 Production time.
• Inform on daily basis the Executive Chef of all relevant information in operational and Personal matters, including information which does not require the Executive Chef.
• Check and monitor the all out-going food order from the Oriental Kitchen and see whether they are properly presented as per the palace standard.
• Assist Oriental Chef to conduct all administrative work required, including, but not Limited to the following:
 Attendance records in oriental Kitchen
 Duty roaster in oriental kitchen
 Maintain Saudi learners training files
 Maintain standard recipe file
 Maintain Outlets rotating menus
 Maintain & Follow-up theme Nights and Promotional menus
 Prepare departmental task break down and maintain a file.
