Sous Chef( Hot & Cold Kitchen) for 4 star hotel in Dubai, previous experience is a must.

Reporting directly to the Executive Chef, providing functional assistance and direction to the kitchen operation. Interacts with individuals outside the Hotel including, but not limited to, clients, suppliers, government officials, royal protocol officials if needed and other members of the local community. Coordinating functions and activities with other Food & Beverage department heads.

General Tasks and Responsibilities:

1. Specific Duties and Responsibilities:

• Responsible for the production, preparation and presentation of all food items to ensure highest quality at all times.
• Establishes and maintains effective employee relations and interdepartmental working relationships.
• Conducts such function as interviewing, hiring, employee orientation, performance appraisal, coaching, counselling, and suspension if necessary to ensure appropriate staffing and productivity. Consults with Food & Beverage Department Heads and Personnel Manager, as appropriate, in performing above duties.
• Identify & develops formal training plans and conducts on-the-job learning events for the Kitchen employees. (Based on need and analyses) as well for his kitchen Sous Chefs.
• Responsible for the preparation of menus and participates in the presentation policy in consultation with the Food & Beverage Manager / his delegate, Restaurant Manager and Room Service Manager, by taking into consideration the following:
 Local (Customer) requirements.
 Market needs.
 Competition / Comparison with other palaces
 New Trends.
 Recipes.
 Food cost.
 Availability of food and beverage products.
 Merchandising and promotion / theme nights.
• Attends and contributes to department head meeting and to the Food & Beverage Meeting twice a Month and daily morning briefings in the absence of the superiors .
• Keeps an up-to-date standard recipe file for all food items to include:
 Recipe list (Cooking with style with standard recipe pictures).
 Sales history
 Food costs.
 Importation items costs.
 Par stock.
 Production time.
• Check and receive the in-coming market list items and ensure their quality levels.
• Check and monitor the all out-going food order from the kitchen and see whether they are properly presented as per the hotel standard.
• Check and receive all store items and ensure they are properly stored.
• Follow the first come first serve policy.( First in first out )
• Inspect and check the food quality levels, hygiene & sanitation of the all food production areas including Outlets.
• Conducts all administrative work required, including, but not limited to the following:
 Attendance records.
 Duty roasters.
 Maintain files of kitchen operation.
 Health inspection records.
 Does daily orders on FBM and checks the consumption
 Attendance of revenue room meetings
 Month end reports to the Food & Beverage Office.
 Maintain standard recipe file.
 Attending of Yield meetings
 Theme nights & Food Promotional file
 Monthly business meetings with F&B Manager
 Attending Sales & Marketing meetings
 Guest satisfaction action plan
 Manages Safety training.
• Check & Monitor all VIP Guest amenities & long staying guest amenities.
• Co-ordinate with F&B Office and prepare food & beverage yearly activity calendar.
• Participate in preparation of the Departmental budget and Goals.
• Conduct monthly market survey co-ordination with F&B Mgr / Materials Mgr/
• Cost Controller.
• Prepare Department (kitchen) employees vacation plan

2. General Responsibilities

• Participate following meetings as per the schedules:
 DH’s Meeting
 F&B business Meeting
 Sales meeting
 Safety & Health Meeting
 Yield Meeting
 Revenue Room Meeting
 Fire Live Safety Meeting
• Familiarizes yourself with the following procedures
 Hotel fire procedures
 Crisis Management system
 First Aid Procedures.
 Health & Safety policy and procedures
 Hotel security procedures
 Hotel product knowledge
 Ihc standard manuals (Department concerned )
• Conducts Night inspections spot check in the Kitchen F&B Department
• Make-sure that all kitchen staff are aware the health & safety procedures of the hotel
• Maintain high rating on staff satisfaction
• Maintain high rating on guest satisfaction
• Conduct monthly communication meeting for kitchen staff.
• Maintain high level of staff discipline.
• Performs related duties and special projects as assigned.
• Complies with Health and Safety Policy.
• Participate the following meetings as per the schedules:
• Maintain high rating on guest satisfaction
• Familiarizes yourself with the following procedures:
 Hotel fire procedures
 Crisis management system
 First Aid procedures
 Health and safety policy and procedures.
 Hotel security procedures
 Hotel product knowledge
 Hotel standard manuals
 Hotel environmental procedures.
• Performs related duties and special projects as assigned.
• To demonstrate pride in the workplace and personal appearance at all times when representing the hotel thus identifying a high level of commitment.
• To adhere to Company and Hotel rules and regulations at all times.

3. Occasional Responsibilities

• To report any equipment failures/problems to the Maintenance Department.
• To pass any maintenance requests to the Maintenance Department.
• To participate in any Training/Developments schemes as recommended by senior management.
• To assist the Executive Sous Chef/Chef De Cuisine in any task outlined/detailed by him/her.
• To comply with any reasonable request made by management to the best of your ability.

4. Legal Responsibilities

• To ensure that the standards required by Law and by Management are maintained at all times in the areas specified above.

5. Working hours
• You are required to work ten hours per day, inclusive of a one (1) hour break or a total of 54 hours per week as provided by UAE Labour Law.


• It’s required to maintain a neat, clean and well-groomed appearance per Gloria standards.
