Purpose/scope
Receive and prepare all point of sale cuts of meats, by cleaning, mincing m de-boning, plucking, skinning etc. and prepare them into stipulated portions and presentation for cooking.

Main duties

* Assist chef Patissier in indenting raw materials received and checking raw materials for quality.

* Check and ascertain the quality and weight of wholesale cuts received.

* Butcher
 Skin and slice liver and kidneys
 Cut, de-bone, skin and trim meats into desired cuts and portions.
 Roll and tie meat.
 Lean and truss chicken and turkey.
 Cut and prepare supremes and portions as stipulated.

* Prepare mis-en-place to meet work needs.

* Eliminate all possible wastage

* Store items as prescribed in proper trays and covered

* Maintain and handle all equipment properly with special attention to safety.

* Keep work area clean per sanitation and hygiene standards.

* Maintain personal hygiene.

* Directly supervisor to all junior commis 2, Commis 3, trainee

* Limits of Authority to the recommendation on the rejection of raw materials not up to standard.

• Coordinations with – receiving an issue of raw materials; Kitchen Stewarding – for cleaning of equipment and spaces.
