Capital Club is looking for quality Head Chef / Executive Chef to oversee the culinary operation. The candidates should come with at least 5 years of experience in the same role with five-star hotel, Golf Club, Private Members Club. This position is a great opportunity for a Head Chef who loves being creative with their menu using current trends and the freshest ingredients from local market.

Qualifications:
• At least five years post apprenticeship experience in a similar or 5 star establishment
• Previous experience in Club Management would be an advantage
• Good management and organizational skills
• Be able to manage and control budget requirements as well as running the kitchen brigade efficiently

Duties & Responsibilities:
• Directly responsible for the day to day running of the kitchen and to maintain the level of quality and control of all food outlets and menu items.
• Hire, train, and mange staff about proper kitchen sensitization methods.
• Be able to manage and control budget requirements as well as running the kitchen brigade efficiently.
• Planning of menus, functions, weddings and events
• Responsible for cost effective purchasing of all food items
• Responsible for the stocktaking of all areas of the kitchen at end of each month
• Responsible for the sanitation and general cleanliness of all kitchen areas, front and back of house
• Responsible for employee roster, payroll, time sheets and control of overtime within the department
• Overseeing the preparation of all food items
• Establishing and maintaining good working relationships and rapport with all suppliers
• Ensuring all costs are controlled by supervising, portion control, wastage, food preparation levels and ordering
• Assuring good workplace health and safety practices are carried out
• Minimizing wastage by controlling par levels of preparation
• Ensuring correct reporting of invoices, credit notes and receipts
• Ensuring 100% productivity of all kitchen brigade members
• Ensuring the growth and development of all members of the brigade
• Recruitment of new employees when necessary
• Ensuring correct receiving and ordering procedures are carried out
• All other necessary and incidental duties as determined by SCI management from time to time.
