GENERAL SUMMARY:

The Outlets Manager is responsible in managing the entire operations and activities of all the outlets of the hotel and ensure to achieve its revenue goals in line with Departmental targets, policies, and procedures whilst providing professional excellent hospitality service to the guests ensuring that their stay will become memorable.

SPECIFIC DUTIES & RESPONSIBILITIES:

• Supervise day-to-day operations of all the outlets of the hotel and ensure to achieve maximum guest satisfaction
• Lead and supervise the daily activities of the F&B Staff and ensure adherence with all F&B policies, standards, and procedures
• Ensure sufficient staff is allocated in accordance with business forecasts to support an efficient and smooth operation
• Plan and conduct on and off job training regularly in order to achieve service standard and knowledge of staff
• Monitor revenue goals of all outlets by executing marketing and sales strategies
• Contribute new promotional ideas for the outlets to increase sales and revenue
• Assist the Director of F&B in reviewing food and beverage cost analysis on a daily basis to ensure costs are in line with budgeted and forecasted figures
• Maintain complete knowledge of service requirements for assigned functions:
o All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices
o Daily menu specials
o POS and manual system procedures
o Daily house count, arrivals/departures, VIPs
o Scheduled in-house group activities, locations and times
o All service standards and operational procedures
• Inspect table set-ups; check for cleanliness, neatness and agreement with guest’s order and departmental standards; rectify deficiencies with respective personnel.
• Understand daily hotel operations and activities (total room occupancy, number of arrivals, departure guests, and VIPs)
• Be knowledgeable on hotel services, operational hours, amenities, functions, and ongoing promotional activities (if applicable). Responds to guest requests for information on local areas of attractions and landmarks
• Ensures compliance with food handling and sanitation standards
• Monitors alcohol beverage service in compliance with local laws
• Contributes to the profitability of the hotel by upselling food and beverage and cross sells outlets within the hotel
• Check and monitor all restaurant stock and supplies; ensure requisition of all necessary supplies
• Ensure all order transactions are processed, registered, and settled
• Handle guest complaints and resolve issues ensuring guest satisfaction, requesting assistance from the Director of F&B
• Demonstrate a high level of customer service at all times
• Project a professional manner with an emphasis on delivering excellent hospitality service
