Your day to day
• On an ongoing basis, control and analyse departmental costs to ensure performance against budget; implementing corrective measures where necessary to produce positive business results• Effectively manage staffing costs by preparing efficient work schedules in line with legal requirements• Oversees special events and special food promotions• Controls and analyses, on an on-going basis, the level of the following: • Sales • Costs • Issuing of food • Quality and presentation of food products • Condition and cleanliness of facilities and equipment • Guest satisfaction • Marketing• Provides direction to the Kitchen helpers, including Chef de Parties, Commis, Cooks, Kitchen Attendants and Stewards• Communicates to his/her superior any difficulties, guest or internal customer comment and other relevant information• Manages all functions of the Food Production and Stewarding operations to achieve the optimum departmental profit• Determines with the Finance Director the minimum and maximum stocks of all food, material and equipment• Communicates politely and display courtesy to guests and internal customers• Demonstrate service attributes in accordance with industry expectations and company standards including: • Being attentive to Guests • Accurately and promptly fulfilling Guests requests • Anticipate Guests needs • Maintain a high level of knowledge which affects the Guest experience • Demonstrating a 'service' attitude • Taking appropriate action to resolve guest complaints• Appreciate the dynamic nature of the Hotel industry and extend these service attributes to all internal customers• Manages all functions of the Food Production and Stewarding operations to achieve the optimum quality level of food production and sanitation• Makes recipes and maintains up-dated and accurate costing of all dishes prepared and sold in the Food and Beverage operation• Develops and writes standard recipes• Develops new dishes and products• Takes steps to ensure that outstanding culinary technical skills are maintained• Develop a competitive business plan for your operational area and communicate this to your operational colleagues and staff• Comply with the Company's Corporate Code of Conduct• Familiarise yourself with the company values and model desired behaviours• Perform tasks as directed by the Manager in pursuit of the achievement of business goals
