Australia's most iconic private island welcomed a new era of luxury when IHG opened InterContinental Hayman Island Resort in mid 2019 and we currently have an opportunity for a Director of Restaurant & Bars to lead the Restaurant, Bars, Conferences & Events for InterContinental Hayman Island Resort. Boasting a grand palette of innovation; five new restaurants and bars and our unique events spaces will present an eclectic array off gastronomic delights and extraordinary local flavour. From our signature beach front restaurant and bar, Pacific, that takes you from morning to evening with an effortless transition from gourmet breakfast buffets to a sophisticated a la carte menu and bar in the evening to sophisticated pool side bar venues and a collection of private dining experiences - our distinct dining experiences will be yours to bring to life. 
 
The re-imagined InterContinental Hayman Island Resort will immerse you in the wonders of working in five-star luxury and offer amazing career and growth opportunities; an opportunity to live in a world heritage area, on the Great Barrier Reef, in a refurbished and exciting Village environment.

Your day to day
In this key leadership role, you will work in partnership with other areas of the Resort to continuously drive and identify revenue, product and guest experience enhancement opportunities. Building on the pre-opening foundations, The Food & Beverage Operation, including in room dinning and events will be yours to drive and grow.
 
With the overall Restaurant & Bars operational strategy in mind, you will curate beverage programs, and industry and brand defining dining show cases; from pop up and beach events to bbqs and fine dining. You will be at the forefront of driving a diverse food and beverage experience. It will also be critical that you have a strong focus on developing your team to create a positive and productive work environment; building, motivating and upskilling them to ensure they are highly engaged, deliver results and know how to truly deliver luxury in the food and beverage space.
 
In addition you will monitor and control the Restaurant & Bars Operation in the areas of revenue, expenditure, profitability and performance against budget whilst also being a key driver of the Resort's branded service delivery across the Resorts Restaurants and Bars and Conferences & Events.

What we need from you
The ideal candidate will have experience both in hospitality, leadership and working in a large complex hotel with multiple Restaurant & Bar offerings or multiple venue capability with events experience. You will have demonstrated capability in influencing and impacting business strategy and also have strong financial, analytical and business acumen partnered with proven ability to deliver on set targets.
 
But it is your leadership and capability in growing colleague engagement where you will truly shine. You will be a change agent with the ability to work alongside a team and collaborate with key stakeholders with a sense of urgency. Strategic thinking, the ability to explore new ways of working and an open minded around how we can drive the Resort forward and deliver unrivalled guest journeys will be highly advantageous. Demonstrated ability to work with guests and champion a brand is also a must.
 
Flexibility to work a varied roster including, late evenings, weekends and public holidays in order to support the operation alongside being comfortable with a base salary of up to $110,000.00 gross, having the ability to relocate and reside on Hayman Island and holding Australian work rights will also be required.
