Looking for a Sous Chef - Lebanese National for our new pre-opening hotel Occidental Al Jaddaf.

CORE RESPONSIBILITIES :
• Oversee and supervise the entire Kitchen operations including production and stewarding in accordance with the department policies and procedures
• Prepare and service all food items in different sections of the kitchen in accordance with the established hotel recipes and standards
• Ensures adherence to Occidental Hotel’s guidelines for food quality, preparation, recipes and presentation, scheduling training as required to achieve
the desired standard
• Ensure food items for storage are well maintained and requisitions are accurate
• Maintain proper rotation of items in all chillers to minimize wastage/spoilage
• Conducts daily briefings/shift handovers to advise all staff on the daily activities

QUALIFICATION :
Essential: Degree/Diploma in Hotel Management or Culinary related course
Desirable: HACCP Certified, PIC Training

WORK EXPERIENCE :
Essential: previous experience in a similar position in the Hotel industry
Desirable: minimum 4 years of extensive experience in Lebanese Cuisine in a hotel or large restaurant

MANDATORY REQUIREMENTS :
Lebanese Nationality; With good background in International and Lebanese Cuisines; Comprehensive knowledge of Kitchen hygiene practices and occupational health and safety standards will be essential
