From the Gulf to Morocco Chef Wafaei’s Tips of the Trade
The Yas Hotel, Abu Dhabi’s most spectacular address, is offering guests the opportunity to hone their cooking skills with a series of authentic Arabic cooking classes this summer. The classes are of course followed by dinner at Atayeb,the hotel’s exclusive Pan Arab restaurant, serving a fusion of Moroccan, Tunisian, Lebanese and Syrian flavours from the bordering regions of the Mediterranean and the Arabian Gulf.
From the 22nd of June to the last Wednesday in July 2011, Head Chef Wafaei Al Zaham will host classes in The Yas Hotel’s Nautilus kitchen, teaching his signature dishes and cooking with small groups. This is the perfect opportunity for any cuisine enthusiast to learn the art of the perfect Arabic dish from raw food mezzeh and fattoush to tagine and tabbouleh. The classes will run from 4-7pm and include a tour and behind the scenes look at gastronomy at The Yas Hotel.
Guests will then enjoy a live demonstration by Chef Wafaei, learning how to perfect three Arabic dishes which will include mezzeh and a main course including stews and tagines dishes, all of which are cooked before guest’s eyes. They will also have the opportunity to assist and cook with Wafaei during the course of the class, ensuring they learn as much as possible. The budding chefs in his audience will then receive a signature cocktail to enjoy and celebrate their accomplishments with the group.
Whether you don’t know your tabbouleh from your fattoush, or you simply want to brush up on your cooking skills, this class caters for chefs of all levels. Ideal for inspiring dinner party menus, the master classes will give guests the confidence to try traditional recipes in their own homes and create the perfect opportunity to get a group of friends together for a fun-filled afternoon.
After learning the skills for themselves, guests will be treated to an evening at Atayeb where they will dine on the food they created with Chef Wafaei in the master class. The lavish dinner will also include signature dishes from his world famous menu.
Guests will take home recipe cards with dishes learnt on the day, plus an apron to ensure that they look the part in their home kitchen. They will also receive a 20% discount voucher for a future dinner reservation at any one of the hotel’s six restaurants.

Classes start Wednesday 22nd June, and will take place every Wednesday until 27th July, 2011

Chef Wafaei Al Zaham was born in Damascus, Syria; he studied kitchen techniques with a degree in Tourism.
He started his professional Career at Omayad Hotel honing his skills in numerous 5* hotels throughout Syria, Jordan, Lebanon and Turkey. In 2000 he arrived in the UAE to start with Beach Rotana Hotel, Abu Dhabi. Since then, he has collaborated with various hotels before joining The Yas Hotel in August 2009 for a new culinary adventure as the chef de cuisine at the Arabic Restaurant, Atayeb.
