ASHIANA LAUNCHES NEW MENU
An Indulgent Journey of Indian Culinary Arts from Past to Present
The Ashiana Indian restaurant located at the 5-star Sheraton Dubai Creek Hotel & Towers is pleased to present its new menu, created by Chef Anuj Sood. According to him, “At Ashiana, a meal is like an indulgent journey, rather than just the destination”. Under his leadership, the restaurant now serves an array of flawlessly authentic Indian cuisine and a blend of traditional and contemporary creations with locally-inspired Middle Eastern ingredients.
Chef Anuj has the flair to recreate some of the most traditional Indian cuisine and at the same time, his ingenuity in using local ingredients has created new delectable favourites amongst Ashiana’s guests. Hence, Ashiana’s new menu displays an impressive selection of both vegetarians and non-vegetarian dishes to satisfy the most discerning Indian food connoisseur.
On why Ashiana is launching a new menu, Chef Anuj said, “Change is the only constant. The old menu was a beautiful compilation of traditions and tastes but considering the richness of Indian cuisine, it is essential to bring in more characters to the menu. We hope this new manuscript of dishes will inspire all food enthusiasts.”
Specially flown in from Delhi, India, Chef Anuj is the inspiration behind the recently concluded ‘7 Wonders of India’ food promotion at Ashiana where he demonstrated his penchant for regional Indian cuisine. He offers a glimpse into the regional foods of India and translates his passion for cooking into his food. He started honing his skills from his daily rituals of preparing home-cooked food with his mother and at the age of 27 years old today, he still gets inspired from his mother’s culinary repertoire.
Upon completion of his Hotel Management degree in Bangalore and Kitchen Management from Welcomgroup Management Institute in Gurgaon (India), Chef Anuj joined the ITC Welcomgroup – India’s premier chain of luxury hotels which is synonymous with Indian hospitality. The aspiring chef became the youngest chef to represent the company and India at a prestigious culinary event in New York, US in year 2007 and was nominated for the ‘Fine Young Chef Award’ last year. He has since made headlines in various TV shows in India.
Some of Chef Anuj’s signature vegetarian dishes from the new menu include Palak Anjeer Ke Kebab (Lightly pan-fried parcels of spinach leaf and gram stuffed with figs and cashew), Aloo Bukhara Kofteh (Cottage cheese dumplings filled with dried plums and simmered in tomato and almond sauce) and Dal Khaas Ashiana (Slow cooked black lentils with tomatoes, garlic and chillies, enriched with butter and cream).
Among the highlights of the extensive menu, the non-vegetarian must-try items include Fish Tikka Kasturi (Fenugreek marinated hammour cooked in a tandoor), Tandoori Lamb Champ (Baby lamb chops marinated in spicy chili and yogure marinade, cooked in a tandoor), Dakhani Jheenga (Arabian sea prawns in tomato and coconut sauce flavoured with curry leaf) and Mutton Ishtew (Lamb stew in spicy tomato, onion, cinnamon and mace flavoured sauce).
