AUTUMNAL TRUFFLE TREASURES AT SEGRETO
Venetian favourite launches new seasonal white truffle menu
Dubai, UAE, 17 November 2015: Segreto, the fine dining Italian concept located in Souk Madinat, brings the white truffle season to Dubai with a special menu crafted in ode to this rare culinary delicacy. Guests are invited to sample select à la carte specials or indulge the palette in a degustation of aromatic truffle dishes developed by Chef de Cuisine Manuel Polin.
The white truffles are sourced from Alba in the Italian region of Piedmont which, unlike their black truffle counterpart, are a rare and sought after variety. The quantity produced in Alba every year is relatively low in comparison to other varieties, enhancing its value for gourmands across the world; whole truffles known to sell for as much as $3000 per pound with a whole white truffle selling at auction last year for a record breaking $61,250.
Segreto’s indulgent white truffle degustation menu will delight culinary enthusiasts with their pick of three, five or – for true truffle aficionados – a seven course set menu of specials, including the ‘Bisque Fredda di Scarola e Crostacei’, a chilled crustacean escarole bisque with raw prawns and hedgehog mushrooms; and homemade tagliolini tossed in white truffle, parmesan and buffalo milk butter. For main courses, the ‘Filetto di Manzo alla brace’ is a juicy chargrilled Australian beef fillet with shredded white truffle and oxtail parcels on the side. Guests can conclude the experience with a decadent serving of the Choko Essenza, a chocolate and truffle extravaganza.
Segreto’s truffle specials will be available throughout the winter season, subject to seasonal availability. Guests can choose from the à la carte menu or the Chef's Degustation Menu, priced at AED 495 for seven courses, AED 425 for five courses and AED 350 for three courses.
