Bocca Hosts Week-Long Truffle Promotion

Hilton Abu Dhabi will serve an all-truffle dinner menu for a full week in November at its Italian restaurant, Bocca.
Hilton Abu Dhabi gives those interested in some gastronomic indulgence the chance to enjoy truffle season as winter takes over the capital.
Enjoy a menu which exclusively uses rare and luxurious truffles from November 20th-26th, 2017 at Bocca, the hotel’s award-winning Italian restaurant.
Designed carefully by Chef de Cuisine Leonardo Passone, Bocca’s Truffle Dinner Menu features two starters, three selections of mains and a decadent dessert – all prepared using the seasonal ingredient in different ways.
Leonardo Passone, Chef de Cuisine at Bocca, said: “We are proud to present our guests with this special menu. Fresh truffles are only available for a few months in a year, and almost exclusively sourced from a part of Italy. Through this menu, we want to share a bit of my childhood culinary adventures where my grandparents would cook using this rare delicacy.”
At Bocca, the truffle dinner kicks off with a cube of polenta and truffle fondue. Another appetiser is the carpaccio served with a winter vegetable salad, sage and black truffle. A highlight of the menu is a famous dish – ravioli with brown butter and truffle sauce.
For mains, Leonardo has also included the Fassone veal tenderloin with sautéed wild chicory, pumpkin and black truffle. Those who would like a vegetarian treat can opt for the baked treasure box of grilled vegetables, served with Scamorza cheese and black truffle.
And like every Italian meal, this menu finishes with a tempting dessert – chocolate cake with honey truffle ice-cream.
