Michelin-Star Chef Frédéric Vardon Adds French Touch to Dubai Locale
1 April 2015 – UAE: Inspired by the luxury brasseries of Paris, La Résidence Restaurant & Lounge is the creation of Michelin-Star Chef Frédéric Vardon, who will introduce his distinctive brand of accessible modern cuisine to the Dubai gastronomic scene for the first time.
Located at the iconic Raffles hotel, La Résidence Restaurant & Lounge promises classic French recipes where taste and dining experience is paramount, with dishes respecting the produce seasonality of France. A rich variety of seafood will complete the menu, with dishes perfectly designed for sharing.
La Résidence Restaurant & Lounge offers a new interpretation of the art of French living through elegance and modernity and is set to become Downtown Dubai's newest dining landmark. The multi-faceted venue aims to attract an eclectic clientele with a taste for great food in a warm and seductive setting, which provides an ideal meeting spot for guests to enjoy a light lunch, catch up with friends over drinks or afternoon tea, treat a loved one or entertain a corporate client.

Evoking the Gallic spirit, the menu will feature traditional dishes selected from all over France. These include starters such as Landes Duck Fois Gras, Burgundy Snails and ‘Parisienne’ Style King Crab, as well as main dishes including Farm Fillet of Veal, Beef Tartare and Duck with Turnips. An abundance of seafood will also be available including a selection of fresh Oysters, Sea Bass, John Dory and Casier Thermidor’s Blue Lobster.
