DOMENICO PIRAS ITALIAN CHEF DE CUISINE, FAVOLA
Born in Milan and raised in Sardinia, a beautiful island in the Mediterranean Sea, Chef Domenico Piras brings his 30 years of culinary experience to Favola. Upon being qualified as a cook at the InstitutoAlberghiero Carlo Porta in Milano, he started his culinary career as Commis de Cuisine and subsequently as Chef De Partie at several hotels in Italy, before answering the call of the sea, serving as Chef De Partie for Princess Cruises’ Sky Princess and Royal Princess; and Sous Chef for Sea Princess. Once back on dry land, he was the Sous Chef for Meeting Service, Sesto San Giovanni under Chef Mauro Ernesto, one of the first chefs in Italy to receive a Michelin star!Following three years at the Golf Club Monticello as Chef De Cuisine, he moved on to Prego Restaurant in Fairmont Hotel and Pontini in Grand Copthorne Waterfront Hotel Singapore.
To the loving chef, family is what matters the most. Having grown up in a fantastic, close-knit family, he greatly treasures the lessons on valoriumani or ‘human values’ taught by his parents. Thesecond most important thing to Chef Domenico, is the passion of chefs for their work. He believes that it takes a sincere heart to produce wonderful food, of course in a kitchen with good and clean equipment! Armed with his personal philosophies and lessons taken to heart, he lead several teams as the former ConsultingChef ofFratini’s Group of Restaurants, Brunei; Head Chef of Sassorosso Restaurant, Kuala Lumpur and Chef De Cuisine for Oso Restaurant, Singapore.The innovative chef has also cooked for a string of royalty and high profile guests, namely, Prince Rainier and the Royal Family of Monaco, Saadi Gaddafi, son of former Libyan leader Muammar Gaddafi; family members of the Sultan of Brunei and Italy’s ex-Prime Minister Silvio Berlusconi.
With a lovefor herbs like wild fennel and myrtle,his dishes are largely colourful,with the traditional Italian taste.Chef Domenico dislikes monotony inthe kitchen, and loveschallenginghimself by creating new dishes fromavailable ingredients in the fridge.While risotto is his specialty and all-time favourite dish to cook, the proud Sardinian is alsomost passionate about introducingMalloreddus and Fregula, famouspastas from Sardinia. In fact, look out for new and exciting pasta dishes such as Sardinian Mixed Seafood ‘Pingiadedda’ and Fregulaand Porcini Mushroom Risotto Topped With Seared Escalope of Foie Gras and Light Jus at Favola.
