EXPERIENTIAL DESTINATION RESTAURANT THE COLLECTIVE TO LAUNCH AT THE GRAND HYATT DUBAI
DINERS SET TO EXPERIENCE A JOURNEY OF TASTE WITH FOUR BESPOKE MICRO CONCEPTS
Dubai, United Arab Emirates - This coming March will see the launch of The Collective, an eclectic and experiential eatery encompassing four micro concepts. Diners can choose from the Levant Emporium, a Grill Bar, Bakery and Bombay Café which will focus on Parsi cuisine; with each area showcasing bespoke design throughout.
The Collective’s four flavours will offer a range of menus from breakfast through to dinner and late night bites, as well as signature dishes to highlight the region. Each concept will have its own live food stations and a la carte offering with seasonal produce all being freshly prepared. A space for rich colour and flavours, the Levant Emporium will focus on local food celebrated in the region; dishes include Tagine, Quinoa Bil Raihan, a Beetroot, Spinach, Feta Cheese & Sumac plate, Mackerel & Dates and Kaskaval Shawarma.
Introducing new tastes to the region, the Bombay Café will focus on traditional Parsi curries, heralding from Persian and Gujarati cuisine. The chefs will prepare a daily selection of dishes served from the Tandoor oven, signatures include Jardaloo Sali Margi (chicken with apricots) and Patra Ni Machi (fish enveloped in green chutney and steamed in banana leaves).
The bustling and Western inspired Grill Bar will encompass diners in an industrial yet buzzing environment as the chefs demonstrate live grill shows, alongside the hanging skewers allowing the range of meats to marinate. The menu will offer much loved favourites and hearty guilty pleasures from Crispy Soft Shell Crab, Short Ribs Al Verde, The Burger - a cheesy and meaty explosion and Salmon Chipotle.
For diners with a sweet tooth The Collective’s rustic Bakery will be just the spot, with a commitment to home baking. Treats on rotation will include fruity Homemade Cakes, Cassis & Torched Meringue, Grandmother’s Apricot Tart and Chocolate Baklava, as well as a selection of homemade Arabic Sweets. The Beverage Bar, centered in the heart of restaurant will be recognized for its extensive range of smoothies, vegetable presses and fruit juices, alongside a selection of Labans, Milkshakes and Lassis to suit every palate.
Executive Chef, Roger Marti’s philosophy for The Collective is, “When the food is ripe and ready we’ll prepare something amazing, it’s all about cooking and serving with flavours; there’s no set menu, you’re cooking what comes from your heart.”
Designed by the renowned Super Potato group, each micro concept houses exclusive décor to best represent its cuisine type from fittings and lighting to plates and cutlery; creating a sensory experience for all diners and providing new elements on each and every visit.
Guests can expect vibrant colours, handmade rugs and the signature book wall in the Bombay Kitchen, mosaic flooring and intricately patterned crockery in the Levant Emporium, with an industrial influence running throughout The Grill Bar. The Bakery, a contemporary yet intimate space showcases a total of 11 different styles of tables and chairs further expanding The Collective’s interactive environment.
In addition to its food and drink offering The Collective, located alongside the Grand Hyatt’s indoor tropical gardens, is set to be a hub for regular pop-ups from supporting emerging designers to new food and drink stalls.
The immersive 240-seat space will provide the ultimate in community dining and the ideal location for meetings, relaxing, socializing or celebratory dinners. From the staff, who will all be dressed in casual urban inspired attire to compliment the eclectic and visionary interiors to the journey of taste diners can enjoy, The Collective will be the must-visit destination for curated cuisine.
