GUEST EXECUTIVE CHEFS AT YAS VICEROY
Critically Acclaimed Chef Mirko Paderno to Guest Chef at Yas Viceroy
1st November 2011. Yas Viceroy is excited to announce that esteemed Executive Chef Mirko Paderno, of Oliverio at Avalon Beverly Hills, will be guest Executive Chef at Yas Viceroy from 3rd – 17th November 2011.
Milanese by birth, Paderno trained at the prestigious Cesare Ritz School in Merano, Italy. After gaining his diplomas he went on to begin his professional career at Four Seasons Milan under the watchful eye of famed Chef Sergio Mei. Whilst in Milan Paderno concentrated on developing a style of cooking that relives the culinary memories of his childhood focusing on the flavour of the food above all else.
In 1999 Paderno assumed the position of Executive Chef at Piero Selvaggio's, Primi, in Los Angeles and later Selvaggio's Valentino restaurant in Santa Monica.
Paderno continued his career at Los Angeles Italian venues such as Celestino Drago, Dolce, All' Angelo and Cecconi’s and in October 2009 was appointed to his current role of Executive Chef at Avalon Beverley Hills’ Oliverio.
Paderno has become one of LA’s most acclaimed Chef’s having received a 2008 James Beard celebrity chef mention as well as being voted in Esquire’s 2007 Best New Restaurants in America. He will be acting as Guest Chef in Amici’s kitchen during his time at Yas Viceroy, working with the local team to introduce his version of modern Italian dishes with a regional touch.

Chef Jacques Pourcel, 2* Michelin, to Reopen Nautilus
Yas Viceroy is thrilled to announce that 2* Michelin Chef Jacques Pourcel will be Guest Chef at the official reopening of Nautilus on 10th November 2011.
Pourcel’s style is heavily influenced by the contrasts of the land and sea of the Mediterranean and the South of France, juxtaposing hot and cold, soft and crispy, and sweet and bitter tastes.
Pourcel began his career when alongside his twin brother Laurent, with whom he opened Le Jardin des Sens in Montpellier at the age of just 24 with. Le Jardin des Sens soon become one of the top gastronomic venues in the south of France and by 1988 the Pourcel brothers were awarded their third Michelin Star for their creative style.
Since opening Le Jardin des Sens, Pourcel opened Maison Blanche where alongside Head Chef Sylvain Ruffenach, Pourcel created a fresh modern French menu, taking inspiration from locally sourced ingredients from the surrounding regions whilst respecting each changing season. Since then, the Chefs have opened Sens & Saveurs, in Tokyo D’Sens in Bangkok and Maison Pourcel in Shanghai.
Pourcel will bring his internationally acclaimed 2* Michelin starred cuisine to Nautilus from 10th -18th November 2011.
