A major goal of the Chaîne is to promote and encourage young hospitality professionals and the skills and “know-how” of young chefs and sommeliers worldwide through the support of the jeune chef rôtisseurs and the jeune sommelier competitions. In 1977, Arthur Bolli, Conseillier Culinaire from Switzerland, created the young chef competition, a 3 course cook off from a mystery box to serve four people.

On the 28thof May, the Bailliage of the United Arab Emirates had their 1stNational young Chef competition held at the world class culinary college , International Centre for Culinary Arts - ICCA Dubai.
Thanks to Chef Uwe Micheel ,Director of Kitchens- Radisson Blu Hotel Dubai Deira Creek, President of the Emirates Chefs Guild and Conseiller Culinaire of the Chaine in the UAE and Chef Daniel Hiltbrunner Conseiller Culinaire Honoraire from ICCA , this prestigious competition has found the way finally into the Culinary Mecca of the Middle East, Dubai.
At 12pm the competition briefing started headed by Chef Uwe with 10 young chefs waiting with great anticipation for the revealing of the mystery box which Chef Daniel put together.
After 30 minutes menu writing, the competitors started cooking with the ingredients from the mystery box which included chicken, chicken liver, seabass, king prawns, sweet potatoes, mango, sage, beans and chocolate.
Our judges kept a good eye on the chefs cooking skills as well as product use and wastage together with their hygiene and work flow. After the culinary creations the tasting judges were but to work marking on presentation, flavours and taste.
Following a post-competition debrief with the judges, the moment finally came that everybody was waiting for …. the announcement of the winner. The winner of the 1stnational competition and representing the UAE in the International competition in Budapest in September is Rahil Rathod from the Radisson Blu Hotel Dubai Deira Creek, in second place was Min Lee from the Burj Al Arab and the 3rdspot was won by Saravana Bhagavath from the JW Marriott Marquis Hotel.
It was a great competition with a very good standard from all participants and they all learnt a great deal during the event.
