NEW RARE MENU LAUNCHED AT DESERT PALM
Modern presentation with a European flair
Dubai, United Arab Emirates – ‘Contemporary European Grill’ is how Executive Chef Steven Vanduyn describes Rare. He has recently transformed the menu to focus on simple presentations with great ingredients using French and modern contemporary cooking styles.
New to the menu is a selection of great classics with an imaginative twist such as Salmon Tartare with white balsamic jelly, Lobster Tail Open Ravioli and Lemon Parfait with Marscapone Cannoli plus unusual dishes with interesting ingredients such as Smoked Provola, Foie Gras Ice Cream and Cucumber Sorbet.
Rare opened in 2008 and quickly gained a reputation as one of the best steak restaurants in Dubai. Although the menu has since evolved, it still retains the best cuts of Australian beef with both Black Angus and Australian Wagyu on offer.
One of the most popular new additions to the menu is the Buratta Fromaggio al Turtufo, an interesting play on the more traditional buratta with a rare truffle burrata cheese as the centerpiece of the dish accompanied by a cherry tomato confit, rocket leaves, sherry vinegar syrup and crisp bread.
The mains, meanwhile, have been updated with dishes such as Corn Fed Chicken Breast ‘Sous Vide’ which is served with wild mushroom ravioli, baby garden vegetables, shaved truffle and chicken and tarragon jus and Braised Milk Fed Veal Cheek with celeriac puree, sautéed veal sweat breads, shallots, garlic confit, baby carrots and Veal jus.
Vegetarians are also well catered for with dishes such as Grass Asparagus Risotto and Roasted Butternut Consommé.
Those with a sweet tooth can enjoy a selection of delicious deserts such as Chocolate Marquise with fresh berries, dehydrated raspberry crumble, chocolate pearls and white chocolate tuile or Pecan Tart with cream cheese ice cream, streusel and vanilla anglaise. There is also an extensive French cheese platter for those whose tastes verge on the savoury, with Brie de Meaux, Bathmale, Blue D’Auvergne, Tomme Du Berger and Saint Loupe accompanied by sliced apple, crackers, walnuts and homemade bread.

Emphasis has been placed on classic dishes with some modern twists as well as introducing some uncommon and interesting ingredients for our guests to experience.”
Rare Restaurant is located at Desert Palm, a Per AQUUM retreat on Al Awir Road in the direction of Hatta / Oman.
