Iconic Michelin-rated Chef Sergi Arola visits to present “all” and “almost all” food menus showcasing his “one bite” and sharing experience
Abu Dhabi, 15 May 2016 – p&c by Sergi Arola, located at Shangri-La Hotel, Qaryat Al Beri, Abu Dhabi, hosts the chef behind the brand for an introduction into a new ‘fun dining’ approach to food. In honour of a one-year presence in the market, the Todo (all) and Casi Todo (almost all) tasting menus deliver a one-bite experience of his contemporary Spanish style of cooking.
The Todo tasting menu, with 17 individual bite-size dishes, is served in six steps, while Casi Todo, with 13 morsels, involves five steps – allowing diners to experience Sea Bass Ceviche, Arola’s Patatas Bravas, Spanish Clam Chowder, Lollipop Lick Lamb and Arola’s Sweet Tapas. Guests visiting the restaurant will find intense flavours in each bite. These traditional tapas allow gastronomes to taste the full Sergi Arola menu in one meal. As Michelin-star dining evolves, it becomes more approachable, relaxed, yet still aims to surprise taste buds.
It is widely understood that Arabic culture influenced Spanish gastronomy and many of its ingredients form the basis of modern cuisine. At p&c by Sergi Arola, the full dinner menu features Sardines and Tuna Mojama (cured tuna under salt) and remains popular as time goes by. Additionally, the menu presents Escabeche, a way to cook and marinate fish through the use of vinegars, oils and herbs. A well-known dessert, Arroz con Leche (Rice and Milk), has long-standing Arabian roots.

As a Shangri-La experience, this signature restaurant from Arola and his personally appointed culinary team continues to impress diners. During his visit, he discussed the new menu items, which will be launched after Ramadan.
“Food is a necessity, but it should also be a pleasure. Our creations, our menus, they are about experience, flavour, colour, presentation and delivery, designed to be shared and enjoyed together. We’re looking to bring those elements to the dining table, so our guests can have the best time possible with friends and loved ones,” said Arola.
Taking the Spanish sharing concept of tapas, Arola’s eclectic menu takes on board cultural sensitivities and provides a broad selection of taste sensations, prepared with Mediterranean flair and the freshest ingredients. Guests can expect to see Chef Arola’s take on classic dishes, such as Tortilla de Patatas al ‘Cubo’, Oxtail Ravioli, Bocata de Calamares and adaptations of Paella, Arroz and Crème Catalan.
