YOUNG CHEFS TRUST MIELE
Next generation equipment undergoes the ultimate kitchen test in Abu Dhabi; four of the city’s best cook-off on Miele hobs in bid to become 2012 Young Chef of the Year
Miele, the leading premium kitchen appliances and white goods manufacturer, took young chefs to task recently as sponsor of the Time Out Abu Dhabi Young Chef of the Year competition, showcasing its range of next generation kitchen appliances at the final stage of the newly launched culinary awards, during a four chef ‘cook-off’.
The Young Chef of the Year concept was launched in 2011 to celebrate young culinary talent in the UAE’s hospitality industry. Miele previously hosted the 2011 Time Out Dubai Young Chef of the Year competition at its Sheikh Zayed Road Gallery.
Taking place at the Westin Abu Dhabi Golf Resort and Spa, the competition brought together four of the city’s top young professionals to prepare a four-course meal for judging by an elite group of culinary experts including Emirates Culinary Guild president and director of kitchens at Radisson Hotel Dubai Deira Creek, Uwe Micheel; David Contreras, executive chef at The Westin Abu Dhabi Golf Resort and Spa; Zoe Cooper-Clark, publishing director Time Out GCC; and Chef Sudu, certified World Association of Chefs Societies judge and executive chef at Traders Hotel Abu Dhabi.
Miele supplied each of the four finalists with a state-of-the-art ceramic cooking hob, giving them all a professional head start to the challenge. “Miele is a keen supporter of young culinary talent, and our kitchen appliances blend on-trend design with superior durability and technological expertise in the same way that these chefs fuse culinary innovation and technical talent to create outstanding dishes,” said Gaby Koudsi, Managing Director for Miele in the GCC.
The four chefs taking part in the culinary challenge were Anahita Gustaspi, Sous Chef, Fairmont Bab Al Bahr; Matthew Goodlet, Executive Chef, Monte-Carlo Beach Club; Mohammad Raees, Junior Sous Chef, Oléa Restaurant, St. Regis Saadiyat Island; and Cyril Calmet, Chef de Cuisine, Pearls & Caviar, Shangri-La Hotel Abu Dhabi.
An exciting menu of Asian-inspired sous vide salmon, butternut squash and slow roasted beetroot soup, pistachio-crusted rack of lamb, and rich chocolate twist n’ roll dessert clinched the award for St Regis’ Mohammad Raees, who was quick to credit the Miele-designed hob on the night.
“In my experience in working with all types of cooking hobs, this has to be one of the best. In terms of cooking timings, I didn’t have to worry about the delay in the pan heating up; I trusted Miele and it certainly helped me during the challenge, and contributed towards me winning Time Out Abu Dhabi’s Young Chef of the Year competition,” he said.
The three runners-up, including Cyril Calmet, Chef de Cuisine at Pearls & Caviar, Shangri-La Hotel, were equally complimentary. “Having never worked with Miele before, my first impression was great. We cooked non-stop for nine hours on the ceramic hobs and they are reliable, easy to use and ergonomically designed. I can certainly see myself working with Miele in the future,” he said.
“Miele is the quality brand of choice for both amateur cooks as well as professionals and, through events such as this, as well as our exciting calendar of culinary master classes - which are held at our Gallery in Dubai – we are committed to offering added value experiences for both our growing list of GCC customers as well as the master chefs of the future,” remarked Koudsi.
