Job Description
We are seeking a strategic, creative, and operationally grounded Senior Director of Global Food & Beverage (F&B) to lead the development and execution of distinctive F&B strategies across our Premium Brands portfolio. This role will be pivotal in translating brand positioning into tangible, guest-centric F&B experiences that can be executed with excellence in every region, while enabling local adaptation.
The role is responsible for defining the global F&B vision for each brand, developing innovative concepts and operational standards, and collaborating across functions to drive guest satisfaction, commercial performance, and brand equity. This is a high-impact role at the intersection of strategy, brand storytelling, operations, and innovation.
Success in this role is dependent on strong, collaborative partnerships with regional F&B leaders, who are ultimately accountable for bringing the brand vision to life at hotel level. The Senior Director will serve as the central architect of global strategy, while actively engaging regional teams to co-develop solutions, adapt concepts, and ensure operational feasibility and commercial success.
Key Responsibilities
Strategic Leadership & Brand Alignment
- Define and evolve a clear and compelling F&B vision for each brand, aligned with brand positioning and guest expectations.
- Translate brand DNA and guest experience pillars into differentiated F&B strategies and concepts that can be activated globally.
- Act as the global F&B voice in brand and experience forums, embedding F&B as a central element of brand storytelling and guest journeys.
Collaboration with Regional F&B Leaders- Serve as a trusted partner to regional F&B leaders, co-creating strategies and toolkits that empower regions to drive consistent, high-quality execution.
- Ensure all global initiatives are developed with early input from regions to address operational realities, market dynamics, and cultural nuances.
- Support regional F&B teams in implementing new concepts, adapting guidelines, and delivering against guest and business KPIs.
- Maintain regular engagement with regional leaders to monitor performance, gather feedback, and continuously refine global approaches.
Concept Development & Innovation- Design and evolve signature dining, bar, and lifestyle experiences that reflect brand identity while staying relevant to global and regional F&B trends.
- Collaborate with chefs, mixologists, designers, and external partners to craft memorable F&B concepts and narratives.
- Lead innovation in service formats, sustainability (e.g. plant-forward menus, food waste reduction), and technology integration to enhance guest engagement and operational efficiency.
Operationalization & Brand Standards- Develop and govern brand standards across all F&B touchpoints, ensuring they are aspirational, executable, and scalable.
- Work closely with regions to ensure standards are integrated into hotel operations with clear training and support mechanisms.
- Provide operational playbooks, tools, and best practices to help properties bring the guest journey to life consistently and effectively.
Performance Management & Commercial Impact- Define and track key metrics across guest satisfaction, profitability, operational efficiency, and brand alignment.
- Analyze insights and business performance with regional teams to identify opportunities for continuous improvement.
- Support the case for investment in F&B by working with Development and Owner Relations to articulate strategic value and ROI.
Cross-Functional Leadership- Lead cross-functional project teams in the development and rollout of new concepts, activations, and global programs.
- Collaborate closely with marketing, design & technical services, guest experience, and brand teams to ensure alignment and impact.
Qualifications
- 15+ years of progressive leadership in F&B strategy and operations within the global hospitality industry.
- Strong experience working in or alongside regional F&B leadership, with a clear understanding of field-level execution.
- Proven track record of translating brand platforms into commercially successful F&B concepts and programs.
- Experience managing across multiple brands and international regions.
- Bachelor's degree in Hospitality, Culinary Arts, Business, or a related field; advanced degree a plus
- Strategic and creative thinker with strong business acumen and commercial orientation.
- Deep understanding of global F&B trends, guest expectations, and operational delivery.
