Job Description
Reporting to the Chef de Cuisine, responsibilities and essential functions include, but are not limited to:
- Provide professional, welcoming, and engaging service at all times
- Prepare and present sushi dishes with consistency, creativity, and attention to detail
- Strictly follow all hygiene and food safety policies of the property (HACCP)
- Demonstrate expert knowledge of fish cutting techniques, rice preparation, and sushi assembly
- Ensure freshness, quality, and proper storage of all ingredients
- Uphold traditional Japanese culinary standards while contributing creative and modern interpretations
- Maintain discretion, professionalism, and integrity at all times
- Keep work areas, tools, and equipment clean and organized
- Adhere to ergonomic, health, and safety standards in the workplace
- Participate in proper product rotation, labeling, and storage to minimize waste
- Follow all departmental and company policies, procedures, and service standards
- Collaborate actively with team members and support the overall kitchen operation
- Show agility and efficiency during peak service periods
- Contribute creatively to the development of the sushi menu and other Asian culinary offerings
- Deliver fast and precise service consistently
- Stay current with culinary trends and techniques within Japanese cuisine
- Perform any other duties as assigned by kitchen leadership
Qualifications
- 6 to 7 years of proven experience as a Sushiman/Sushiwoman, including apprenticeship or equivalent training
- Culinary diploma or demonstrable experience in Japanese cuisine
- Strong expertise in sushi and sashimi preparation techniques
- Previous experience in 4-star or 5-star hotels or renowned restaurants is an asset
- Knowledge and implementation of food hygiene and safety standards (HACCP)
- Passion for culinary arts and Japanese gastronomy
- Highly responsible, reliable, and committed to excellence
- Ability to work independently and as part of a team
- Creative, detail-oriented, and skilled in presentation
- Capable of handling multiple tasks and last-minute changes effectively
- Perform well under pressure in a fast-paced environment
- Flexible and available for variable schedules, including weekends and holidays
- Strong command of Portuguese
- English or other language skills are a plus
