Position Overview
The Assistant Director of Food & Beverage plays a critical role in the leadership and execution of our resort's food and beverage operations. Reporting to the Director of Food & Beverage, this role oversees multiple outlets and ensures operational consistency, financial performance, and exceptional guest service across the resort.
This leader collaborates across departments, drives service excellence, and plays an active role in maintaining the standards required of a Forbes-rated and Michelin-recognized property.
Key Responsibilities
Operational Leadership
• Oversee the day-to-day operations of all food and beverage outlets, including the signature restaurant, bar, in-room dining, and special events
• Support outlet managers and supervisors in executing consistently exceptional service aligned with luxury hospitality standards
• Partner closely with the culinary team to develop seasonal menus, beverage programs, and experiences that align with guest expectations and brand values
• Ensure compliance with all health and safety regulations, sanitation protocols, and licensing requirements
Financial Management
• Assist in the development and management of departmental budgets, labor planning, and overall P&L performance
• Monitor financial metrics and implement strategies to drive revenue, control costs, and optimize profitability
• Contribute to pricing, product selection, and promotional initiatives in collaboration with the Director of Food & Beverage
• Maintain relationships with key vendors, ensuring product quality and favorable purchasing terms
Leadership & Team Development
• Lead, mentor, and inspire a team of managers and hourly colleagues, fostering a culture of excellence, accountability, and growth
• Conduct performance reviews, provide coaching, and develop talent to build bench strength within the department
• Coordinate training programs to ensure consistency in service standards and operational procedures
• Assist with scheduling and labor management to align staffing levels with business needs
Guest Experience & Engagement
• Maintain a strong presence in outlets during peak service times, engaging with guests to personalize experiences and resolve concerns proactively
• Monitor guest feedback, online reviews, and survey results to identify areas of opportunity and implement meaningful improvements
• Work with resort leadership and marketing to align offerings with guest demographics, seasonal trends, and resort initiatives
Innovation & Sustainability
• Stay informed on industry trends, luxury service innovations, and emerging guest preferences
• Support the resort's sustainability efforts, including sourcing locally and seasonally, minimizing waste, and operating responsibly
• Partner with departments across the resort to create cohesive guest experiences that reflect the Alila and Hyatt brands
Compensation and Benefits
• Annual salary range: $90,000 - $110,000, based on experience and qualifications

Qualifications
Qualifications
• Minimum of 5 years of progressive experience in food and beverage leadership, preferably within a luxury resort or fine dining setting
• Proven ability to lead multi-outlet operations and manage high-performing teams
• Strong financial and analytical skills, including experience with budgeting, forecasting, and labor cost management
• Deep understanding of luxury service standards and Forbes inspection criteria; prior experience in a Michelin- or Forbes-rated property preferred
• Certifications in Food Safety and Responsible Beverage Service (RBS) strongly preferred
• Excellent communication, organization, and interpersonal skills
• Proficiency with POS systems, restaurant management software, and Microsoft Office Suite
Physical Requirements
• Ability to lift up to 50 pounds and stand or walk for extended periods
• Comfortable working in fast-paced environments, including exposure to heat and humidity
• Must be available to work a flexible schedule including nights, weekends, and holidays
