JOB SUMMARY
Executive Sous Chef
As the Executive Sous Chef, you will be responsible for overseeing daily kitchen operations, driving culinary innovation, and ensuring the highest standards of food quality, hygiene, safety, and team performance. You will play a key leadership role, supporting the Executive Chef in executing the strategic culinary vision and delivering exceptional guest experiences.
Key Responsibilities
• Lead all kitchen outlets, ensuring operational excellence across all culinary areas.
• Support the Executive Chef in strategic planning, execution, and implementation of culinary initiatives.
• Supervise and coordinate daily kitchen activities to ensure consistency, timely production, and cost efficiency.
• Handle guest feedback and resolve complaints professionally to maintain high levels of guest satisfaction.
• Maintain rigorous food safety, hygiene, and sanitation standards in compliance with HACCP/GFS protocols.
• Coach, mentor, and develop chefs and kitchen staff, fostering a high-performance team culture.
• Ensure stewarding operations and back-of-house cleanliness meet the required standards.
• Conduct regular service checks across all F&B outlets to ensure adherence to quality and service standards.
• Drive the implementation of minimum operating standards across all kitchens in close coordination with outlet managers.
• Assist in the preparation and control of daily and weekly market lists and procurement.
• Create and innovate new dishes and recipes, staying ahead of culinary trends and guest preferences.
• Continuously seek improvements in kitchen operations and processes.
• Perform regular spot checks on fridges and food storage to ensure product quality and compliance.
Requirements
• Minimum 5 years in senior culinary leadership roles, including 2+ years as an Executive Sous Chef, preferably in a luxury resort or hotel environment.
• Strong culinary expertise across a variety of cuisines, with a passion for creativity and innovation.
• Proven leadership skills with the ability to inspire, train, and manage high-performing culinary teams.
• Strong knowledge of cost control, inventory management, and kitchen budgeting.
• Deep understanding of food safety standards and operational compliance (HACCP/GFS).
• Excellent organizational, time management, and multitasking abilities in a fast-paced kitchen environment.
• Proficiency in kitchen management software, including ordering, inventory, and scheduling systems.
