Casa Brera, a Luxury Collection Hotel, Milan belonging to Marriott International, is currently recruiting a F&B Manager.
Reporting to the General Manager, the F&B Manager will be in charge of both F&B and Culinary departments.
This position supports the smooth running of daily F&B operations across the restaurant, room service, events, and culinary teams. It combines hands-on involvement with team coordination, guest experience, and operational standards.

What you'll do
- Manage daily operations of the all-day-dining restaurant, room service, events and culinary teams.
- Monitoring guest satisfaction and train associates to deliver a high-quality experience to our guests.
- Oversee all aspects of team management, including recruitment, training, performance management.
- Ensure application and compliance with company standards and procedures.
- Ensure application and compliance all applicable food and beverage laws and regulations.
- Assist in tracking F&B costs and revenues and support the team in meeting financial goals.
CORE WORK ACTIVITIES Leading Food and Beverage Team - Oversees all culinary, restaurant, beverage and room service operations.
- Supervises and manages employees.

Ensuring Exceptional Customer Service - Understands the brand's service culture and implement brand and company standards accordingly.
- Monitor and action on guest satisfaction surveys and reviews ensuring quality goals are met.
- Drives alignment of all employees, team leaders and managers to the brand's service culture.
- Takes ownership of a guest complaint/problem until it is resolved.
- Ensure services are above and beyond for customer satisfaction and retention.
- Improves service by communicating and assisting individuals to understand guest needs, providing guidance, training, feedback, and individual coaching when needed.
- Serves as a role model to demonstrate appropriate behaviors.
- Manages day-to-day operations, drives quality, and verifies standards are meeting the expectations of the customers on a daily basis.
Accounting and Purchasing - Ensure accurate tracking and reconciliation of F&B costs by overseeing inventory management, daily revenue reports, and cost control measures in alignment with hotel accounting standards.
- Support procurement processes for food, beverages, and supplies, including vendor selection, purchase order approvals, ensuring compliance to company standards and cost-efficiency.
- Collaborate with Finance and Purchasing departments to maintain budget compliance, monitor expenditure trends, and support monthly financial reporting and forecasting for the F&B division.
Managing and Conducting Human Resource Activities - Provides guidance and direction to subordinates by conducting performance reviews in a timely manner.
- Promotes both Guarantee of Fair Treatment and Open Door policies.
- Identifies the developmental needs of others and coaches, mentors, or otherwise helps others to improve their knowledge or skills.
- Deliver discipline, brand and company trainings and ensure compliance with company mandatory trainings.
- Oversees and coordinates the recruitment process to ensure timely and effective staffing across all departments based on operational needs and workforce planning.
- Coordinate requests and scheduling of casual staff
Additional Responsibilities - Ensure associates stays informed and updated on department and hotel information, events, performance etc.
- Drives effective departmental and hotel level communication
- Ensure cooperation across departments
- Act as a Brand Ambassador inspiring associates to live our culture
- Participate to companywide activities and ensure departments' involvement
What you'll need: - Experience managing daily F&B operations in upscale or luxury hospitality.
- Ability to lead and support teams across restaurant, room service, and events.
- Proven ability to motivate, coach, and engage teams to deliver high performance and service excellence.
- Strong understanding of inventory, cost control, and basic budgeting.
- Experience in purchasing and supplier coordination.
- Strong guest service orientation with attention to detail.
- Comfortable working cross-functionally and supporting departmental goals.
Languages skills Must be fluent in Italian and English languages.
