Description
Are you a culinary artist with a deep respect for tradition and a hunger for innovation? Do you dream in sashimi and roll with precision? We're looking for a Sushi Sous Chef to join our dynamic kitchen team and help elevate our sushi program to new heights.
ð¯ What You'll Do
• Assist the Executive Sushi Chef in daily operations, prep, and execution of sushi offerings
• Lead and inspire the sushi team with hands-on training, quality control, and creative input
• Ensure consistency, cleanliness, and excellence in every roll, nigiri, and omakase experience
• Monitor food production, quality, and consistency daily, while managing staffing levels and coordinating department training
• Oversee inventory, manage food costs, and uphold health and safety standards
• Collaborate on seasonal menus and specials that blend tradition with bold creativity
• Maintain flexibility to work varied shifts, including weekends and holidays, to support the needs of a busy kitchen
ð§ What You Bring
• 3+ years of sushi experience in a high-volume or fine dining setting
• Deep knowledge of Japanese ingredients, knife skills, and sushi techniques
• Culinary education and strong cost control skills
• Excellent communication and organizational skills
• Computer proficiency relevant to kitchen management (inventory, scheduling, orders)
• Experience with guest contact, fostering a welcoming environment
• Leadership ability to train, motivate, and manage staff effectively
• Ability to thrive under pressure while maintaining artistry and precision
• Passion for hospitality and creating unforgettable guest experiences culinary teaching skills and knowledge
